OT - Eff Off/Forn Friday

TGIF, STalkers! What a week this has been. I've been busting my hiney all week, but there is so much to be done, it feels like trying to walk backwards up a Down escalator. Ugh. I am VERY ready for the weekend and some time to chillax and regroup!

Eff off to:

  • Covid. That *&!@(&X#>*!!! One of my dearest friends lost his wife this week. One of my cousins passed away last night.
  • People who refuse to understand I have ZERO desire to socialize. This introvert is practically borderline agoraphobic now. I'm content to stay home with DH and 'socialize' via computer or text (if it's textable, do not effing call me).
  • King Pita. What kind of voodoo or spell or ritual dance does Evil Aniki need to do for that effer to STFU? Gaaaaaaaaaaaahhhhh. Because of KP's neverending mouth, we have well-over-the-end-time...
  • Zoom conferences. I swear that I have done more Zoom conferences in the last year than I have in my entire 35.5 year professional career. And long-talkers like KP, Mumbles, and Princess Drama (and his dramatic huffs and sighs) make these darn things longer and more painful. 
  • Those in this wintery tundra who constanly whine and moan about the snow and cold. Hello!!! We had record low snowfall last month. Sack up and deal with Winter FINALLY arriving. 

 

Moving on to Forn... Forn is 'food' and 'p0rn' combined. Superbowl is this weekend and plenty of folks like to have snack/finger food for the big game. DH and I are having hot wings and cheese crisps (I'll be noshing on some celery, too).

 

Jalapeno Cheese Crisps

  • 1 cup finely shredded Parmesan
  • 1/2 cup shredded Sharp or Extra-sharp cheddar
  • 1 jalapeno, sliced thinly
  • Real bacon bits
  1. Preheat the oven to 375. 
  2. Line a large baking sheet with parchment paper.
  3. Spoon about 1 Tbsp of parmesan into a small mound, and top with about 1 Tbsp of cheddar.
  4. Carefully pat down cheese and top with bacon bits and a jalapeno slice.
  5. Repeat with remaining ingredients.
  6. Bake until crispy and golden, about 12 minutes.
  7. Let cool slightly on pan before serving (can be served cold).

 

 

Cheese Crisps

  • 1 cup shredded Monterey Jack cheese

Choose Toppings:

  • 1 medium jalapeno, sliced thinly OR
  • Dried oregano and mini pepperoni OR
  • Mushrooms, sliced thinly OR 
  • ???
  1. Preheat oven to 350.
  2. Line a large baking sheet with parchment paper.
  3. Spoon about 1 Tbsp of cheese into a small mound.
  4. Carefully pat down cheese and top with your preferred toppings.
  5. Repeat with remaining ingredients.
  6. Bake for about 12-15 minutes (longer if you prefer them browner and crispy).
  7. Allow to cool completely before removing from the pan.

 

 

NOTES:

  • Italian 6-Cheese Blend works well in the second recipe and is done in 12 minutes (edges are brown).
  • The pepperoni and mushroom ones are very good dipped in pizza sauce (I used Prego).
  • There is really NO limit to what you can use – just be sure to slice your toppings thinly.

We are munching on chips, guac, salsa and spinach artichoke dip during the game.  Then a rotisserie chicken for dinner (west coast so the game is early here).

Eff off to powerpoints and management that wants constant stupid edits.  Change the font to blue, etc.  Waste of time....

Spinach artichoke dip = Yum! I like mine with a little garlic.

I quit watching football a few years ago and only tune in for the commercials. May not even to do that this year since Budweiser has pulled out. No clydesdales?! *sad*

Don't really care much about the game itself.  I do watch the commercials, halftime show, and eat, drink and be merry!

I will tune into the half-time show and watch for a bit, but rarely watch the entire thing. Unless I'm a huge fan of the artist(s). I still have fond memories of U2 in 2002!

Happy Friday!

EFF OFF to teams meetings and the head cheese wanting us to do endless video calls with clients.  

We are having spinach dip bread bowl, 3 different types of wings, hoagies and danishes.  All but the bread bowl was ordered from our local mom and pops.  Covid is hitting them hard.

That's the second spinach dip! May have to skip the celery and make spinach dip instead. We ordered the wings from a local place.

Covid has been a small business killer. I know several people who have lost their business or their place of work closed permanently.

COVID for the same things Aniki described above and the major inability for those wanting a vaccine to get one.

My state is completely unprepared for and lacks the leadership to successfully handle such an undertaking!

A small eff'r off'r to the weather causing the cancellation of watching my grand dogger today. .

My cousin was unable to get in for a vaccine. He is the main caretaker for his 97yo mother, who may now have to go into a senior home.  Sad

It took forever for my Dad to arrange for him and my SM to get the vaccine. And they won't be able to get it for almost a month! *dash1*

My "famous guacamole"

1. delicious and perfectly ripe avacado

2.  olive oil (not mayo)

3. Diced tomato

4. Minced onion (white)

5. Lots of chopped cilantro

6. Minced jalapeno

7. small squeeze of lime (not lemon!)

 

My less famous but still awesome sweet chili chicken wings

1. Chicken drumsticks

2. Mae Ploy Sweet Chili sauce

3. A little flour

Lightly flour the drumsticks and pan fry.

In a bowl, combine drumsticks in Mae Ploy sauce and pan fry again.

I have never made chicken wings before, but want to try them. Your method sounds like they'll be crispy (soggy chicken skin is nasty).

Been working on complex budgets for the next fiscal year (which is 6 mos away) and it's been painful because so many researcers don't have funding moving into next year (lack of funding from the feds and stricter terms has made it harder for medical research - unless you are working on COVID).  So I've been crunching numbers ALL day for two weeks now and it's exhausting. Plus figuring out new systems at work that are NOT doing what they in charge said they would do.

I am stopping work an hour early today.

Forn?  Ugh. DH has a lot of digestive issues - we know what some of them are so he can avoid some things. But it's flaring up again and he's back to bland food. Which means I'm usually eating bland food too. I am not cooking two meals. I'll just have to eat myself some yummier lunches to make up for it.  Sigh.

Can you take out DH's portion, then spice up yours? I do that. Or take out my asparagus and cook his to mush. (Blech!)
