OT - Tone-up Tuesday

After eating a(nother) sketchy chicken sammich at work yesterday, I probably dropped a 2-3 pounds last night, racing back and forth to the bathroom.

Over the weekend, I tried Zoodles. Zoodles are zucchinis that have been spiralized into noodles. I've been looking for something that will quell my craving for pasta and zoodles are a doable substitute!! Here's what I did...

Aniki's Cheesy Steak Zoodles

4 oz. steak, cut into strips
8 cloves of roasted garlic, roughly chopped
3 cups of zoodles
Parmesan cheese, grated
Red pasta sauce

Toss zoodles with 2 tsp. of olive oil and freshly ground sea salt. Set aside.
Heat 2 tsp. of olive oil in a skillet over medium-high heat (one with decent sides for 'tossing').
Sauté the steak strips. Remove from skillet and drain excess liquid.
Add zoodles to skillet and sauté 3-5 minutes.
Drain any excess liquid.
Add pasta sauce, garlic cloves, and steak strips.
Toss/stir until heated through.
Stir in Parmesan cheese.
Dump into bowl and top with a little more Parmesan.
This is a single serving.

I didn't put amounts on the pasta sauce or cheese because everyone likes theirs differently - saucier, cheesier, etc.

That recipe was a single serving, so double accordingly. I was VERY surprised when I showed DH a picture and he said he'd eat it!!!

Yum! I've never tried zoodles but I definitely want to!

I just made a crockpot meal the other night that turned out WONDERFULLY! Chicken, stuffing @ green beans...so so easy to make and it was so good. I LOVE Thanksgiving, especially the stuffing so it was just awesome Smile

It's Day 3 of trying vegan for me. I'm not kidding when I say the bloating is better but the salt usage has increased. Instead of giving up pasta, I'm giving up dairy. Please eat cheese for me.

I need to try zoodles.

No dairy?? Where's the freakin' crying emoji? I buy Califia Almond milk. It's pretty tasty.

You could make the recipe without steak and cheese. What about substituting tofu for the steak? This would be good with a spicy 'sausage' tofu, too.

Nice! I bought the shredded "cheese " but thought I should wait a while before trying. I used to eat cheese and other dairy products daily. I plan to go to Earth Fare this weekend as they have a more extensive list of items I want to try than the local grocery stores. We have a Whole Foods but I refuse to navigate the parking. Any other suggestions for success?

Zoodles are delicious! I have a spiralizer and my dh loves them. I make a simple sauce with sauteed ground chicken and crushed tomato (with garlic and other Mediterranean spices) top with Parm cheese.. .YUM.

We did zuchinni on the grill the other day. I scooped out the core and put cherry tomatoes in it and topped with a bit of shredded cheese. YUM.

Lately have been making vietnamese "BUN" with the rice vermicelli noodles, cukes, tomato, pickled carrot slivers and fresh cilantro and basil. Use a doctored up hoisin sauce on pork cut razor thin then grilled. YUMMMM.

I love zoodles and I also love butternut squash noodles and sweet potatoes noddles! I love cooking up a spaghetti squash and using that as my pasta substitute too. I tried those shirataki noodles and about gagged, it wasn't really the taste so much as it was the texture, I decided they were the same as what it must feel like to eat a worm. ACK!

I could probably live with out bread and pasta but I just don't think I could ever give up cheese. Nope.
"this has too much cheese on it"... said no one ever! Wink

Daizy, I want to make sweet potato noodles with a tomato/green olive sauce and chicken. I tried using spaghetti squash as a sub, but it didn't work for me. Speaking of worms... Wink

I LOVE pasta, which is why I'm looking for a substitute. I wanted to find something that I could sub half of the pasta, but the zoodles will work fine withOUT any pasta. Unfortunately, I've been having a love affair with bread all of my life.

Cheese... I'm want to make a 4-cheese sauce with gorgonzola, parmesan, gruyere, and asiago or raclette. There is NO such thing as too much cheese!

This is very painful. I reactivated my MyFitnessPal account yesterday and am not off to a good start! I am starving today so today will be no better.
