OT - Thankful Thursday

Who else is ready for the weekend? Work has been crazy the past few weeks and this week is no exception. If anything, it's the craziest week yet. 1.5 more days...

I am thankful for:

  • Having a good job! Despite the fact that it's been hectic lately, I like my job, my boss, and the majority of my coworkers.
     
  • Friends who say they are there for you 24/7 and MEAN IT. I was having a crap night and was talking to a friend until almost midnight.
     
  • Crappy (former) friends. Yes, crappy. They have taught me what it means to be a BAD friend, what is NOT acceptable, and what I NEVER want to be.
     
  • STalk. I honestly don't think my marriage would have survived had I not found this place almost 5 years ago. xoxo

I'm thankful for:

  • SD6's dresser coming today so clothes will no longer be housed on the floor with her. (her dresser broke, she was SUPPOSED to be keeping them in some baskets I gave her... Naturally she didn't...)
  • My new dresser coming today (the one I use has been on loan from MIL for YEARS now... I was ready for my own)
  • The cars both working great
  • DH realizing I was right and apologizing for being such a jacka$$ last night.
  • The fact I'm taking a half day and get off work in an hour
  • STalk... Because I need this outlet
  • Punching bags because I"m an angry and aggressive soul
  • My furbaby who makes me feel so beyond special with how excited he gets to see me and how much he's glued to my side. A definite mood booster after a long a$$ day.
  • Pinterest. Because I found a great recipe for Bruschetta chicken for dinner and I'm excited. It'll be nothing compared to my uncle's... But I'll try (He's a pro chef... He introduced me to Bruschetta growing up and I"m a bit of an adict... His has always been the best though!)

Bruschetta Chicken

Indredients

  • 3 Tbl Extra Virgin Olive Oil, divided
  • 1 lb boneless skinless chicken breasts
  • 1 Tbl dried oregano
  • 2 tsp garlic powder
  • kosher salt
  • Freshly ground black pepper
  • 3 c. chopped tomatoes
  • 1/2 shallot, minched
  • 3 cloves garlic, minced
  • 1/4 cup Freshly Shopped Basil
  • Shaved Parmesan
  • Balsamic glaze

Instructions:

  • In a large skillet over medium heat, heat 1 Tbl oil.  On a plate, season chicken with oregano, garlic powder, salt, and pepper.  Add chicken to the skillet and cook until golden and no longer pink (about 8 minutes per side.
  • In a large bowl make bruschetta topping: tomatoes, olive oil, shallot, garlic, basic, and season generously with salt and pepper
  • Top chicken with bruschetta and shaved parmesan.  Drizzle with balsamic glaze

 

That's the recipe! I'll let you know if it actually tastes good after I make it tonight Wink

Thank you - that's sounds very tasty!!

Since I'm solo for dinner on weeknights, I'm just throw together some cherry tomatoes, avocado chunks, and feta cheese and toss them with some olive oil, lemon juice, and sea salt.

Thankful for you Aniki for always making us look on the bright side even when I feel like I can't get out of this dark hole the last two months has put me in

Thankful for my DH and his smile that lights up his face.  Even when he isn't feeling it, he gives me that smile to let me know he is standing by with the shovel to dig me out and bury the bullshit in!

Thankful for my job that makes me be nice to people.  LOL  Fake it till ya make it!

Hola Aniki!

  • I am thankful for my upcoming cruise during Spring Break!
  • I am thankful for good health and waking up this morning to enjoy another day to improve myself.
  • I am thankful for a wonderful sister who always has my back Biggrin
  • I am thankful for my job and the income it provides to take care of my family.
  • I am thankful for wonderful coworkers and not working in a toxic environment.
  • I am thankful for for the funny posts/responses on Steptalk that make me LMAO Lol
  • I am thankful for my kids.
  • I am thankful that I will be graduating with my Bachelor's degree next month, after a long journey of achieving this goal.

I am also thankful for my sister, who is my best friend and always has my back!

I am so very Thankful for my parents.  May they rest in peace.

I am so very Thankful for my dh.

I am so very Thankful for my bios.

I am so very Thankful for the wisdom and grace given to me during some very hellish times because of BM and her kids.

I am so very Thankful my kids do not fight with eachother. 

I am very fortunate...in so many areas. Very grateful and I do not take any of it for granted.

My Mom passed away almost 8 years ago and I miss her still. I'm thankful every day that my Dad is still here and we can talk. <3

I am thankful:

That I NEVER have to go to work again.  

For my wonderful husband.  As I am dealing with some mobility issues he has taken over the shopping, cooking, laundry, etc. plus he hauls me where ever I need to go - even if it means multiple trips in traffic so I can have dinner with friends.

For my great friends - many of whom go back 50 and 60 years.

That except for having feet that don't work right I am in excellent health with no pain.

That I never have to see SS34.  No pressure from DH at all.

I still get together with friends I've known for almost 50 years. Isn't it wonderful to have aaaaall that history?

After 9 days of this 'weekend' I am ready for it to be OVER.

Thankful for:

DH supporting me on this trip and not complaining once about my boundaries.

DHsis for being helpful, kind to SDs, but still very much not holding back.

The beautiful English country and history. I have a list of new things to do next time we are here WITHOUT SDs! Not ever again.
