O:T any good vegetarian recipes

I want to add some vegetarian meals to my families diet to cut down on having to buy so much meat and DH and I want to start eating healtheir and get the kids to make better food choices. I was hoping you guys could help me out with some recipes that aren't obvious to the kids and DH that its veggies on their plate.

* no tufo please DH says it taste like dirty socks between butt cheeks lol.

I cook a lot of beans and peas. I usually have something "meaty" in for flavoring which would not work for a true vegetarian but helps with cost and issue of eating too much meat.

I buy smoked ham hocks or pork necks or a left over ham bone - dirt cheap and it only takes one. or you could use liquid smoke.

I chop up a lot of onion, garlic, celery, green pepper, herbs, etc. The men in my neighborhood love me because I always have extra and send it over.

Try bean chilli, my DH actually likes it an he's a meat and potatoes guy. Just get the chilli packet and follow the directions just replace beef for another can of beans (i get at least 2 different kinds).
Also try tempeh, has a meaty consistency and a nutty flavor but absorbs the flavor of whatever you marinate it with, asian sauces are good. You just marinate then stir fry until golden brown, get some veggies in there and pair with brown rice, yumm!

For summer I've been loving an avocado salad DH and whipped together after a farmer's market day. Cut up avocado into chunks, mix with diced tomato, onion and cilantro and throw in some corn and cannolini beans. Mighty tasty and very easy.
