Butternut squash cubes (cooked soft and nicely caramelized), scrambled eggs, salsa verde, and goat cheese all wrapped up in a tomato-basil tortilla.

Sounds pretty good!

I have been eating tortillas like every night! Mostly with slow cooked brisket and cheese and avocado, onion, jalepeno and tomato. I like crushing tortilla chips in it for texture.

It's quick and easy and lots of flavor... so I am not overeating.

I made tortilla roll-ups over the weekend for a party and had a couple of leftover tortillas. I ate the spinach one on Sunday and just dumped in a can of tuna (we were out of bread and I was starving).

I love Mexican food and this is similar to a dish I had a few years ago, so I thought I throw some things together and hope it turns out!

Your posts always make me hungry, and sounds delicious. Thankfully I am filling up on bite sized Halloween chocolate. If trick or treaters don't come soon the lights will go out, because the pumpkin basket will be empty. }:)

You have posted some VERY interesting food threads which make my tummy rumble. There are lick marks on my screen!. This one? No.
Sweet (caramelised butter nut) and salty (cheese?). No thank you.

Its probably because I hate goat's cheese, basil, and overly sweet vegetables. Trifecta of Yuck!

Goat cheese, IMO, is not at all salty. DH and I like it as a 'dessert'. We spread it on water crackers and drizzle with honey or top with a dollop of fruit butter or preserves. Delish!!

Goat cheese? No way. It needs to stay in the goat!!

Any other cheese I would love with honey, crackers and fruit. Yum yum. Sounds awesome!
But goat cheese? Goat cheese? Noooooooooooo!!!! Smile

Myss.Tique, try St. Angel spread on pieces of French bread (or something similar) and drizzled with honey. Mmmmm...

i'll pass on the honey, but i'd love that with a little schmear of strawberry or raspberry preserves...

and maybe even some crumbled bacon. just cuz, you know, bacon.

Actually.. I am also not a huge fan of the goat cheese. perhaps because I raised goats for a while and they have a certain.. as Andrew Zimmern would say.. barnyard aroma.

i find much of the goat cheese I have tasted to have a similar harkening back to that musky male goat essence.

I have eaten similar styled soft cheeses though.. but the goat.. probably would sub in a different cheese.

It's weird. I like stinky cheeses like blue cheese too.. just the goat puts me off a bit.

this! I love blue cheese too. But goat cheese has this weird pong. Food should not smell like old goat!

How about some focaccia bread topped with thin slices of pear, blue cheese crumbles, and chopped walnuts - broil, then drizzle with honey.

"I hate goat's cheese, basil, and overly sweet vegetables" - but, but, but that is a trifecta of pure and absolute yumminess for me!!! dh took me to carrabba's for my birthday where i ordered my favorite menu item - "chicken bryan" - grilled chicken breast topped with goat's cheese, chopped basil, and sweet, chewy sun-dried tomatoes with a lemon-butter sauce. PURE HEAVEN!!!
