Who doesn't like pie!?!? I'm especially fond of apple and chocolate cream. Although key lime and lemon meringue are also wonderful....

Oh my god it's so funny you posted this. I'm 34 weeks pregnant and have never, ever liked apple pie but 10 minutes ago I started bugging my husband for apple pie. He's like "you don't even like apple pie?!?" but seriously, it's all I want right now!

Our friend makes a double layered pumpkin pie...cheesecake on the bottom with pumpkin on the top with a gingersnap crust.

My son makes a homemade caramel pie, it's pretty good, he got it off of his game Fallout.

EASIEST PIE EVER. I just made this the other day.

1 Package frozen puff pastry
3 C fruit (I used blackberry and peach, both fresh)
1.5 T sugar
3 T flour
Butter
Salt
Buttered/sprayed Muffin tins (makes 18), regular size.

Thaw puff pastry (should have 2 sheets)
Mix fruit, sugar, flour, dash salt in a bowl, set aside.
(FYI: I would add a little cinnamon or something next time)

Cut pastry into 9 squares each.
Press squares gently into pan - into each muffin hole - and poke with fork.
Add a large spoonful of fruit mix into pastry (should fill up half-way).
put about 1/4 tsp of butter in the middle and a sprinkle of sugar over the top.

Bake 400 for 15-18 min until pastry is browned.

EAT THEM.

This would be great made with something savory too, like ground chicken or turkey.
Ohhhh, or with salmon. Or anything.

I've had them with a Sauv blanc (yum), and some beer last night. Both went well.

I've been planning my menu for Thanksgiving and trying to decide what pies (in addition to pumpkin, apple and pecan) to include. Maybe German Chocolate Pie. Or Lemon Chess. Or both!

Has anyone ever tried the Steel Magnolias "pie"? Okay, it's more a dump cake/cobbler, but this just reminded me of that...

"A cup of flour, a cup of sugar. A cup of fruit cocktail WITH the juice. Then just mix and bake at 350 until gold and bubbly."
