OT - Simple meals for 2

So skids go to BM's every other weekend, Thursday evening to Monday morning.

I try to make some yummy dinners for us since we don't have kids to feed (they're not overly picky but I do try to make things I know they'll eat). Well older kids...DD2 doesn't count in my book because I always have to feed her separately anyways because she has to eat ASAP when she gets home at 5:15.

So since I'm pregnant about to pop (hopefully) does anyone have any yummy, yet simple meals for two they can share?

Feel free to leave a recipe, or just the name of something if it's easy to google.

Crock pot meatballs, creamy potato soup in the crock pot, asian marinated pork chops, marinated fajitas, anything grilled!

Baked skinless chicken breasts. Season breasts with whatever you like, cover with tinfoil, bake at 350 till done (about an hour), top with cheddar and cover with tinfoil again to help the cheese melt (about 10 minutes). Make some type of rice while the chicken is cooking - I like Uncle Ben's traditional wild rice. Maybe a salad. You're looking at maybe 10 minutes of prep time for everything, and that's if you're going at a snail's pace.

I make sausage and shrimp once a week!

1 pound Smoked Turkey or chicken sausage
1 pound extra small shrimp/precooked/tails off
1 green pepper
1/2 onion
minced garlic
Old bay
garlic salt
pepper
crushed red pepper (if you like it spicy)
Little bit of chicken broth

Cook onion and green peppers and garlic, add sausage and spices, then lastly add shrimp and 1/8 cup of chicken broth and simmer for 5 minutes or so. I put it over either mashed potatoes or mashed cauliflower ( I guess you could do rice, but I hate rice Wink )

I'm a huge fan of tacos. Breakfast tacos, black bean tacos, and especially shrimp or fish tacos.

I like to get tilapia and bake it.

Thin corn tortillas
Pico - diced tomato, onion, cilantro and lime juice
Lettuce
Avocado

A little time consuming, but I like to make fresh slaw sometimes too.
green + red cabbage, carrot shredded
1-2 Tbsp of rice vinegar
1-2 Tbsp of Vietnamese dipping sauce
Fresh lime juice
Mix - lasts 48 hours in the fridge

My husband loves chicken teriyaki. He loves Yoshida sauce, which I think they sell at Walmart and all the big grocery store chains. You throw the chicken in a ziploc bag with Yoshida sauce and leave it for an hour or two (sometimes we leave it overnight), then either throw on the grill or bake it in the oven. We usually eat that with steamed broccoli and sometimes with white rice. Super easy, reasonably healthy (probably a lot of sodium and sugar in the marinade), and tastes great for lunch the next day, too.

I'm a bad cook lol, and a lazy one.....

nothing beats a good healthy salad for 2 and a tenderized steak, it's quick and easy.

sometimes I will get smoked chicken breasts, simply slice it and put it in a wrap with salad.... you can either warm it up or eat it cold.

Make a huge pot of nice soup.... and then freeze it in portion sizes... easy to defrost and it's quick dinner with fresh rolls

a real treat, sometimes very expensive... cheese and meat platter... and you nibble on it through out the night

if you have left over pasta or spaghetti or rice and cold meat, or a tin of tuna, or spam... simply cut it all up, beat 4-6 eggs and through it over with salt and pepper, some grated cheese over and tomato slices on top.... bake in the oven till eggs are done... usually about 30min, hell you can even pop it in the micro wave for 10-15 minutes
