Who knows any good pasta sauce that doesn't involve tomatoes?

I love pasta.... it was always a staple in my home growing up.  Spo many different ways to cook it.... but i always include tomatoes,  fresh or canned/ diced or sauced... but it has conne to my attention theat after 8 years of me cooking some form of tomato y pasta that sd had developed heart burn (I think mostly from being over weight, or she's just making it up) ....

 

Soooooo I need other ideas, other than fettuccini, pesto, and macaroni, whaat other sauces do you make for your pasta? DH hates pesto and homemade macaroni.  I can make fettuccini but that gets old for me fast.  Sd is going to be here for a solid month, so I need ideas.

Pasta salad (with either a mayonnaise dressing or tossed with Italian dressing) is always popular here.  The skids also like noodle casseroles with a cream soup (either canned or homemade).  Also, it's not quite pasta, but everyone in my house likes risotto and there are any number of ways you can make that.

Oh, I've never Nader risotto! I'll look up some recipes with that, thank you! And I'l try the cream  soup ands pasta salad as well

Alfredo Sauce

  • 1/2 cup butter
  • 2 garlic cloves, minced
  • 2 cups heavy cream
  • 1/4 tsp white pepper
  • 1/4 tps salt
  • 11/2 to 2 cups freshly grated Parmesan cheese (I prefer half Parm, half Gruyere)
  1. In a medium sauce pan over medium heat melt butter. Add garlic, cream, pepper, and salt.
  2. Bring to a low boil and reduce heat to medium-low and simmer for 8 minutes.
  3. Remove from heat and slowly add cheese.
  4. Return to stove on low and cook for 2 to 3 minutes, stirring constantly. 
  5. Serve hot.

While this is good as is, I have made several variations by adding pre-cooked ingredients. My DH doesn't like big pieces, so I cut things like asparagus in about 1-inch pieces and really cut the stem out of the broccoli so the florets are about the size of my thumbnail.

Chicken, mushroom slices, asparagus, broccoli, shrimp, clams, ham, peapods, spinach, green/red/orange peppers... There's really no limit to what you can use. 

You can add a little tomato sauce to it (turns it orange).

Sounds really good,  I cook mainly vegetarian sho we could do that with all different types of veggies!

She's anti tomato and anti mushroom,  but maybe it I cut the mushrooms way down into small slivers she won't really know?  Im gonna try it, it sounds so good

I have made the sauce with roasted garlic. After reading some of the comments, I think the hotdog plan is the best one for your SD. Lol, every time I have eaten sun dried tomatoes, I find that the acid seems to be stronger, so your SD is talking out her ear.

Clam sauce, Scampi...

You could also do a vodka sauce that has "some" tomato.. but not as much as full on spagetti sauce.

I would also be tempted to buy hotdogs and buns.. and sub that for her meal when she "can't eat the sauce".

I love the hot dog idea, I might do that if she continues acting like this. She came over last week talking anout how she loved her mom's sun dried tomato sauce.... I just ignored the comment, but inside, it really made me want to laugh at the whole thing, she made such a wahoo big deal about how she has acid reflux,  and now she's over there eating sun dried tomatoes.

Can she take tums? I’m pregnant and tomato sauce gives me bad heartburn right now but I won’t give up my pasta lol if I take a couple tums before I eat I am usually ok.

Probably,  but she HATES taking medicine,  she'll probably complain threw taking it.

Ha ha ha, she's 14, takes forever and make a huge scene anout taking medicine. I HAVE to leave the room everytime.

If you're looking for a lighter version...

Alfredo Sauce

  • 1/4 cup butter
  • 2 cups non-fat milk
  • 1-8oz package fat-free cream cheese
  • 6 oz grated Parmesan cheese (you can use low/-no fat Parm)
  • 2 tsp garlic powder
  • 1/8 tsp white pepper

 

  1. Melt butter in non-stick saucepan over medium heat; melt cream cheese and garlic powder in butter, whisking. Pour in milk, a little at a time, whisking to smooth out lumps. Stir in Parmesan cheese and pepper until smooth.
  2. Remove from heat and when sauce reaches a creamy and thick consistency (about 5 minutes).

You could just sprinkle some yummy cheese on top and serve with a salad for some veg. It's simple but yummy if you use good cheese. Or pasta, olive oil and garlic (lots of recipies online), great with fresh pasta. Or orecchiette, sausage and broccoli is yummy too. Spaghetti carbonara is another favorate of mine.

Pasta with walnut sauce

To make your own walnut paste, blend 150g walnuts with a few tbsp olive oil, a handful of parmesan, a pinch each of paprika and nutmeg, a garlic clove and a squeeze of lemon.

Serves 4
400g dried short pasta
4 tbsp walnut paste
5 tbsp olive oil
2 tbsp freshly grated parmesan
5 sage leaves, finely chopped
Sprig of rosemary, leaves finely chopped
Salt and black pepper

1 Put your pasta on to boil. While it is cooking, gently heat the walnut paste in a large frying pan with 3 tbsp oil.

2 A minute before your pasta is ready, drain it, reserving a little cooking water, then add it to the walnut sauce and toss well. If the sauce needs loosening, add a splash of the pasta water.

3 Add the parmesan, herbs and remaining oil to the sauce. Toss well and serve.

  • Linguine with samphire and prawns (or any seafood you enjoy.  I do it with mussels also.)

During the summer, I make orzo with feta cheese, olive oil, and veggies (usually grape tomatoes and cut up asparagus).  You can try it with different veggies the SD will eat and add the tomatoes to your dish.  It is a great meal to make ahead and serve cold with a nice White wine (if you like wine) and garlic bread.

Traditional pasta sauce is gravy-based, not tomato. I've tried it a few ways with chicken, beef and pork sausage and it's always delicious. Just make a quick roux of butter and flour with your cooked fat from the meat and add chicken, veggie or beef stock, some herbs and salt and it's done!

All it is, is you heat olive oil (need quite a bit as this becomes the sauce so say 1/4 cup) in a pan and sautee some finely diced and crushed garlic till fragrant, add some fonely chopped anchovies (3), then add some breadcrumbs (2 tablespoons) until mixture thickens and cooks then add finely chopped lemon rind and add lemon juice and stir in cooked pasta. I usually juice 1-2 lemons. You finish plating it and adding grated cheese on top (parmesan or cheddar) and i love adding chopped parsley at the end. Its so yummy and you can add prawns too.

the anchovies in it don’t make it taste fishy... i sometimes add grated carrots to add and sneak in some veggies... otherwise i love pasta with pesto or a white cheese sauce like bechamel

I do a simple herb mix sometimes, which I love.

Saute as much garlic as you want (I do at least two cloves per person) just until fragrant in a good amount of olive oil, add either Italian seasoning herbs or your own herb mix, and quickly stir in and remove from heat.  Add salt/pepper as wanted. Pour over pasta.  Add more seasoning or olive oil as needed/wanted.  Grate fresh parmesean over the top when serving.

Pasta Bake: brown some onion, garlic then ground beef, add some cumin, oregano and salt, add some water and reduce. Cook 2 cups macaroni, add a little butter and cream and place in a baking dish. Cover macaroni with the beef then top with half a cup of parmesano, top with bechamel sauce and another 1/2 cup of parmesano. Bake for 30-40 minutes at 320F.  

Bechamel sauce (to die for): 1/2 cup butter, cubed, 2/3 cup all-purpose flour, 1/2 teaspoon salt, 1/4 teaspoon pepper, 4 cups milk, 2 large eggs, beaten. Simmer - adding ingredients in the order listed, stirring constantly.

HIgh Protein, low fat Alfredo Sauce.

1/2 Cup low-fat cottage cheese

1 Cup milk (preferably 1-2%)

1/2 cup parmesan

1 Tbl Corn Startch

1/4 teaspoon salt

1/8 tsp pepper

1/4 tsp garlic powder

Oregano to taste

Basil to taste

 

Throw all ingredients but the oregano and basil in a blender and blend to smooth. Place over heat and add oregano and basil. Heat until slighlty thickened. Serve over pasta, veggies, whatever suits you Smile

Mizithra cheese and spaghetti is great. Google the Spagetti Factory version, and try serving it with a side of italian sausage.

I also make Pan Spaghetti. DH and I like it so much that we don't even eat conventional red sauces anymore. It does call for diced tomatoes, but you can probably play with the recipe.

Me and my youngest are vegetarian, my DH, my oldest, and sd atw not.  So I try to cook mainly vegetarian dishes,  unless I can cook meat on the side for them.

salad with ham, peas, ranch mix (with sour cream), swiss cheese and parmesan. I make enough to last a couple of days because everyone loves it. 

Brown butter and garlic and then top with cheese and herbs

Pesto, I typically do a walnut pesto because walnuts are cheaper but every few months I spring for pine nuts. 

Cheese sauce with bacon and buttered onions. Sometimes I make the sauce separate and other times I make a Mac and Cheese. 

I didn't see that your husband hates pesto and homemade mac (although who hates homemade mac????). But sometimes we do two sauces so that everyone is happy.

About a teaspoon of cinnamon in a big pot of sauce will nullify heartburn.

Dh has bad heartburn...never has it with my sauce.

I will try theat next time I make spaghetti, I'm not going to STOP making spaghetti, I live my spaghetti.  I grow my own oregano, basil, and garlic just for it! Im growing tomatoes now too. I also wasnt to get a pasta press so that I can do that as well. I always add a spin off sugar to the sauce top cut acid, but I could switch it out for cinnamon.

When I was 14, I used to cook dinner for the whole family. Cannot even imagine my mom’s face if I would say “cook me this, don’t cook me that”. 

I would simply leave her manage her diet herself, she is old enough

Make the tomato sauce and give lard ass SS a side of Tums and recommend that he go for a workout.  If necessary. Just put noodles in a bowl  with a side of butter.  I am not one to cater to stupidity while the stupid keep doing the same things over and over again while complaining about the results.  

If he has a medically Rx'd condition, that is an entirely different thing than if he has heartburn because he is a lard ass.
