OT - Forn Friday

Cool, crisp lettuce. The crunch of celery. Sweet strawberries. The tang of cheese…

We’re moving into warmer temps and fewer clothes. I don’t know about you, but warmer weather means I want lighter foods. I loooooooooooooove salad. And I’m not talking about a side salad. When I eat a salad, it’s my main course.

Lettuce: spinach, kale, spring mix, arugula (I eat iceberg, but not often)...
Veggies: celery, beets, shrooms, carrots, artichoke hearts,cherry/grape tomatoes (yes, techinically fruit)...
Fruits: apple, blueberries, strawberries, mandarin orange, pineapple, craisins...
Cheeses: sharp cheddar, feta, bleu, gorgonzola (no bland cheese for me!)...
Proteins: Salmon, chicken, pecans, walnuts, sunflower seeds, pepitas, BACON...

Time to dress your salad! Here are some quick and easy recipes.

Avocado Vinaigrette

  • 1/4 cup white wine vinegar
  • 1/3 cup olive oil
  • 1 ripe avocado
  • 1 Tbsp lemon juice
  • Mix well in a blender or food processor.

Balsamic Vinaigrette

  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 garlic clove, crushed
  • 1/2 Tbsp honey
  • Whisk together in a mixing bowl.

Italian Red Wine Vinaigrette

  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 Tbsp Italian seasoning
  • 1 Tbp Dijon mustard
  • Whisk together in a mixing bowl.

Sesame Vinaigrette

  • 1/4 cup rice wine vinegar
  • 1/2 cup toasted sesame oil
  • 1 garlic clove, crushed
  • 1 Tbsp soy sauce
  • 1/2 Tbsp honey
  • Whisk together in a mixing bowl.

NOTE: Season all dressing to taste with salt and pepper.

YUMMM salad.  

My favorite lite dinner fix is just spinach, feta cheese and jersey tomatoes with a little EVOO.  

Omas Cucumber salad with dill, lemon juice, sour cream and sugar dressing is also a hit.

My girlfriend made a DEVINE cucumber salad with only sliced cucumbers, red onion, and tomatoes topped with EVOO and vinegar (I think white) just seasoned with salt and pepper.

This is a favorite of mine in the summer months, too. I do EVOO + a few splashes of red wine vinegar. Coarse black pepper. Topped with feta.

Every once in a blue moon, when the fungi craving is strong, I will thinly slice a bunch of shrooms and use them as the "lettuce". I throw in a few pieces of iceberg or romaine for crunch, then top with a parmesan dressing.

Oh goodness. I LOVE mushrooms. All kinds. This sounds amazing.

My DH disliked mushrooms, until he met me and had them prepped / cooked all the different ways. He often thanks me for introducing him to loving them.

I don't have dinner plans if you'd like to test out some new combos.... I also love onion and beans on salad! Oh and part-skim mozzarella Biggrin

Confession: I rarely eat salad dressing! Sometimes I squeeze fresh lemon over it all, which brings out the flavor of everything. Most of the time, I mix in about 1/4 cup of cottage cheese instead of actual dressing.

I eat salad as a meal, too. 

I usually do a mesclun salad mix and add in (more) spinach and kale. 

My favorite lately has been adding pepitos, cranberries, walnuts, and feta with a poppyseed dressing.

I love kale!! My DH refuses to eat it. I have a delicious recipe for Ginger Beef, Mushroom, and Kale Stir-Fry. The kale looks like spinach. He said, "Wow, that smells great! What's in it?" I told him, and he refused to even taste the sauce because of the "nasty" kale. I should have told him it was spinach...

Too funny.

My almost 3 year old loves kale just as much as I do. My DH is okay with a little at a time (he’ll definitely enjoy some roasted kale chips when I make them), and my 4 year old is a big ‘ol NOPE. 

That’s fine. More for me (insert hair flip emoji - haha).

Ewwwww not me.  I cant just sit down and eat a salade. Sorry Anikia

Now give me Salade and soup from Olive Garden---the ZUPA soup and I am good. Minus the rear sticks, I mean bread sticks.

I love salads, but not half as much as my husband does.  Can't tell you how many times w'lle go out to eat and he'll order a dinner salad while I get a meaty entree.  Invariably the water tries to bring me the salad - assuming it's more of a "girl" thing.

Bad waiter. BAD!!! I'm a carnivore and eat a bigger size steak than my DH!! He, on the other hand, eats more chicken.

Best salad I ever ate in my life had some wonderful fresh peaches, goat cheese and toasted pecans on mixed greens.
