No, I'm not talking about the computer kind. I'm talking about the eating kind. I am craving cookies so badly, my mouth is watering. Specifically, Elevator Lady Spice Cookies. My Mom had a cookbook (now mine) that's called The I Hate To Cook Book by Peg Bracken - it's an entertaining read! There is a recipe in there for spice cookies. THE best spice cookies I've ever had in my life (I'm 53). So, from the book...

Elevator Lady Spice Cookies

(Once, in an elevator en route to my office, I was eating some spice cookies which I had made from a recipe in my big fat cookbook. I gave one to the Elevator Lady, and she tasted it. "My," she said reflectively, "I can sure make a better spice cooky than that." So she brought me her recipe, and she was quite right. This is a short, rich, ginger-snap sort of a cooky, and the recipe makes plenty.)

Mix together
3/4 cup shortening
1 cup sugar
1 egg, unbeaten
1/4 cup molasses,

Then sift together and stir in
2 cups flour
2 teaspoons
1/4 teaspoon salt
1 teaspoon cinnamon
3/4 teaspoon powdered cloves
3/4 teaspoon powdered ginger

Now mix it all together, and form it into walnut-sized balls. Put them two inches apart on a greased cooky sheet and bake at 375 for ten to twelve minutes.

Can't Stop Cookies

2 c sugar

2 c butter                                      1 c chopped pecans(optional)

3 c flour

2 t cream of tartar

1/2 t salt

2 t baking soda

4 c cornflakes - slightly crushed by hand

Cream butter and sugar, add dry ingredients, fold in cornflakes.  Roll into balls and bake at 350 for 10-15

minutes. Makes 100 cookies. My oven takes less than 10 minutes.   Make sure they turn brown as that makes them carmelized.

  Hall of Fame Cookbook 2001.  I made these one night when I wanted a cookie without too many ingredients.  I never use the pecans.

Coconut cookies are my fave. ALOT of coconut. Think they got sweeten condensed milk in them. Recipe is somewhere..

Coconut Macaroons

  • 5 1/3 – 5 1/2 cups flaked coconut (usually a 14 oz package)
  • 1-14 oz can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract

Preheat oven to 350 degrees F (180 C). Line baking sheets with parchment paper or aluminum foil. Spray paper or foil with nonstick cooking spray.

In a large mixing bowl, combine coconut, sweetened condensed milk, and extracts. Mix well.

Drop by rounded teaspoonful onto prepared baking sheets, leaving about 1 ½” between the cookies.

Bake 8-14 minutes or until lightly browned around the edges.

Immediately remove from baking sheets to wire racks to cool. Store loosely covered at room temperature.

Coconut-Chocolate Macaroons:

  • Stir 1/4 cup semi-sweet chocolate mini morsels into the dough.
  • Drizzle melted semi-sweet chocolate over the baked cookies.
  • Dip the bottom of the baked cookies into melted semi-sweet chocolate. Place on wax paper to dry.

OMG I REMMBER YOUR MOM MAKING THOSE COOKIES!!!!!!!!!

My favorite is still the Ice Cream Cookies that she made. I hate having an oven with no window - can't watch the cookies "melting". I'm making some tonite!!
