Simple Brine for Pork or Chicken

Combine first four ingredients in microwave safe container and heat on high for 3-5 min, stirring occasionally, until the sugar and salt have dissolved. Let cool to room temperature.

Place pork or chicken pieces in gallon zip bag and pour brine over the top. Seal bag and place refrigerate for 1-2 days. Recommend placing bag in a bowl in case of drips.

We've tried this with bone-in pork chops, pork tenderloin, and chicken. SD8 loves this recipe b/c it makes the meat very tender. First time ever she asked for "more meat."

Substitutions:
Sub one of the cups of water for apple cider.
Sub the brown sugar for 1/4 cup maple syrup.

Pizza for fussy eaters who don't like cheese or tomato

This is a really tasty pizza for all those that loathe cooked cheese and tomato!

Preheat oven to 180 deg C
Chop chicken breast into small strips
Heat olive oil in frying pan
Add chicken
Fry till cooked (not overcooked though)! Add the seasoning as you go. Chop up the pepper and add to the fryingpan.
Spread a thick layer of sour cream over the pizza base (which needs to be on a baking tray)
Empty contents of the frying pan on top of the sour cream and spread out evenly.
Drizzle the sweet chilli over the top
Put in oven for 15 mins.

Serve with mixed salad and garlic bread.

Chicken, Broccoli, Cheese, and Rice Casserole

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium saucepan, bring the water to a boil. Mix in the instant rice, cover, and remove from heat. Let stand 5 minutes.
3. In a 9x13 inch baking dish, mix the prepared rice, chicken, cream of mushroom soup, cream of chicken soup, butter, milk, broccoli, onion, and processed cheese.
4. Bake in the preheated oven for 30 to 35 minutes, or until cheese is melted. Stir halfway through cooking to help cheese melt evenly.

Easy Chicken Alfredo

Grab a big Skillet, add 2 TBS butter, turn on medium, add chicken breast, cook until done.
Cut chicken into cubes (any size you want)Set aside
In same skillet, follow directions for making pasta
Add cubed chicken and some Parm cheese and salt to taste
Mix together and enjoy.

Sweet and Sour Chicken

Cook chicken in oil until done. Add green pepper and liquid from the pineapple. Bring to a boil and cook for 3 min.

In a bowl, mix cornstarch, water, sugar, soy sauce and vinegar. Add to chicken and cook until it thickens. Add pineapple and stir until hot.

Mexican Lasagna

Pre-heat oven to 350. Make rice as directed (we make it in the microwave)

Spread 1/4 cup of enchilada sauce on bottom of 9x13 glass baking dish.

Mix remaining enchilada sauce, 8 oz. (1 cup) sour cream, chicken strips, black olives, rice and taco seasoning in large bowl. Tear 5 flour tortilla's & spread out on top of enchilada sauce. Pour half chicken mixture over flour tortilla's. Spread thin layer of cheddar cheese over mix. Repeat layers. Place in oven for approximately 20 minutes, until heated through.

Take out of oven, place tortilla chips over top (spread evenly so top is covered) and other toppings (green onions, tomatoes and/or salsa, lettuce & anything else that sounds good), cover with cheddar cheese & place back into oven until cheese is melted.
