Description

First off I noticed there were no other Irish recipe's here so since I run a traditional Irish household I figured I would share one of mine. This is MY version of the traditional Irish Shepards pie.

Ingredients

  • 2 lb Ground beef
  • 3 potatoes

Instructions

I usually make it in my big cast iron skillet since I can go from stove top to oven with it. The great thing about Shepard pie is it is meant to use up left overs, so you can vary it however you want depending on the stuff you have on hand.
First off I use peeled and sliced 2-3 large potatoes instead of mashed, I usually brown the slices a bit in olive oil then set them aside.
-brown 2 lbs of ground meat, you can use beef, lamb, deer, turkey, or/and any combination there of my favorite is lamb or 1 lb deer and 1lb beef
season the meat while it cooks with garlic, salt, pepper, Italian seasoning etc.
-if you like you can add chopped onion and/or peppers
-if I have left over cabbage from a cookout (recipe coming soon) i will through that it shredded or carrots left over from a roast, like I said look in the fridge what need used?
-one can tomato paste
once all your ingredients are cooked remove turn off heat and add crumbled feta cheese mixing it in.
then top with the slices of potatoes and bake for about 20-30min till potato slices are tender.
My husband LOVES this dish and so do the kids!
